Faster host screen cold start

The host screen's initial load is now under two seconds even on a thin venue WiFi connection. Performance work that matters most at the start of a busy service.
Some venues run the host iPad on the same WiFi as everyone else, which means contention right when service kicks off. We've reworked the host screen's data layer so it loads on a thinner connection and survives WiFi blips without re-fetching everything from scratch. Smaller experience win that matters most exactly when you need it.
